Roquefort Salad Dressing

Roquefort Salad Dressing

l/4 cup rice vinegar

2 tablespoons chopped fresh thyme, or 3/4 teaspoon dried

I teaspoon Dijon mustard

I clove garlic

l/2 cup extra virgin olive oil

l/4 cup crumbled Roquefort cheese

Salt and freshly ground pepper

  1. Combine the vinegar, thyme, mustard, and garlic.

  2. Blend until the garlic is finely chopped.

  3. Slowly add the oil, taking care not to curdle by adding too fast

  4. Stir in the cheese

  5. Add salt and pepper to taste.

  6. Cover and chill the dressing until ready to use it.
