Creamy Parmesan Salad Dressing

l/4 cup mayonnaise (low-fat is ok)

1/4 cup freshly grated Parmesan cheese

3 tablespoons white wine vinegar

2 tablespoons sour cream

2 tablespoons chopped fresh parsley

1 tablespoon Dijon mustard

Pinch of fine herbs

Salt and pepper

1/3 cup olive oil

1. Combine all the ingredients except the oil in a bowl

2. Add salt and pepper to taste.

3. Blend well.

4. Slowly add the oil, whisking constantly until the creamy salad dressing is emulsified.

5. Cover and chill the salad dressing until ready to use.
