Fish Recipe

STUFFED HADDOCK

 

CLEAN a medium-sized haddock, keeping it whole.

Dry it, and rub a little salt down the backbone.

 Make a stuffing with 2 teacupfuls breadcrumbs, 2 teaspoonfuls chopped parsley, 1 oz. chopped suet, pepper and salt to taste, and a little milk to bind

Stuff the fish, and sew or tie up with tape, and lay in a greased dish.

Shake some flour over the fish, dot with butter or dripping, and bake for 20 minutes.

Serve, garnished with slices of lemon, and sprigs of parsley.
