Fish Recipe

Flounder and spinach

Preparation time: 12 minutes

Cooking time: 15 minutes Serves 6

Ingredients:

6 fillets of boned flounder

3 hard boiled eggs

200 grams of cooked chopped spinach

300 ml of dry white wine

200 ml of milk

2 tablespoons of plain flour

2 teaspoons of lemon juice

250 grams of grated cheese

l'/2 teaspoons of black pepper

l'/2 teaspoons of salt

 

Preheat the oven to gas mark 8 (230° C). Place the fish fillets in a saucepan and pour the wine over them and add salt and pepper. Bring the pan to the boil and turn the heat off. Finely chop the eggs with the spinach. Lightly butter an oven-proof serving dish, drain the fillets reserving the stock and place them in the prepared dish. Blend the flour with the milk then, bringing the stock to the boil, add them, stirring constantly to avoid lumps. Remove the sauce from the heat and add the lemon juice. Spoon the spinach and egg mixture over the fish, followed by the sauce. Sprinkle with the cheese and cook till golden brown (10-15 minutes).

Suggestion: Plaice or haddock fillets can be used instead of the flounder.
