Fish Recipe
Pickled mackerel

Preparation time: 20 minutes
Cooking time: 5 minutes Makes 16 pieces
Ingredients:
4 red onions
4
whole mackerel V
2 litre of white vinegar
2 bay leaves
24
peppercorns
Handful
of dill (roughly chopped)
1 teaspoon of salt
Wedges of lemon

Peel and slice the onions. Bring the vinegar to the boil with
the peppercorns, salt, and bay leaves. Remove from the heat and allow the
mixture to cool. Clean the mackerel, remove the heads, halve each fillet, and
cut in
half again. Dry the fish well with
kitchen paper, put it in a screw-top jar, with the onions
and
pour the spiced vinegar over them.
Store in the fridge until required.
Suggestions: Serve the fish with dill and
wedges
of lemon.
