Fish Recipe

Lobster Savannah Supreme

 

2 oz Butter
2 cups sliced Mushrooms
1 cup diced red peppers

1 tbs Spanish paprika
1.5 cups Sherry
1 dash of Salt
1 dash  Black pepper
4 cups Locke-ober's cream sauce
1/2 cup of diced Pimientos

4 3  lb lobsters to be boiled
4 tsp Parmesan cheese -- grated

Preparation Time: 1:00


NOTE: Adjust recipe to size/qty of lobsters


1. The Sauce-- Heat butter to melting point in a large saucepan add mushrooms and green pepper. Cook until tender. Add paprika stir in sherry and pimientos and blend. Simmer a short while.

2. The Lobster - boiled -  This can be done while rest cooking- Discard intestinal vein and stomach before dicing.

3. Add the lobster flesh to sauce and simmer on low for 10 -12 minutes. Divide
mixture  and spoon back into lobster shell. Sprinkle with  parmesan cheese then  brown in a 380-degree oven for 12-13 minutes more if needed.
