Fish Recipe

HADDOCK PUFFS

 

4 Ib cooked haddock

Liquor in which haddock was boiled.

2 ozs. self-raising flour

Salt and cayenne to taste

1 oz. finely chopped parsley

2 eggs

Milk

FLAKE the haddock with a little of the liquor it was boiled in, add the flour, seasoning and eggs, and add sufficient milk to make the mixture of a soft consistency like sponge sandwich dough.

Have ready some very hot fat, and drop in tablespoonfuls of the mixture.

Fry until golden brown. They will puff up beautifully.

Serve very hot, with mashed potatoes.
