Fish Recipe

FISH SOUFFLÉ

 

1 Ib. codfish (any other kind of fish will do)

1 large tablespoonful flour.

 2 ozs. butter.

2 eggs.

Pepper and salt to taste.

1 pint of milk.

 

PUT flour, milk and butter into a saucepan and stir until boiling.

 

Pick all the bones from the fish, which should then be broken into pieces—not too small.

Add fish to sauce and draw pan to side of fire, beating in the yolks of two eggs.

 

Then whisk the whites well into the mixture.

 

Fill a dish three parts full with the mixture, and bake in a moderate oven for 1/2 hour.

Serve at once.
