Fish Recipe
Fish salad
with horseradish
|
(Norway)
Preparation time: 25 minutes Cooking time: nil
Serves 4 to 6
Ingredients:
1 kilo of cod fillet (cooked and
cold)
6 tablespoons of horseradish root
(grated)
1 large carrot (grated)
Half
litre of sour cream or yoghurt
6 spring onions (chopped)
4 eggs (hard boiled)
1 crisp lettuce
1/4 cucumber (grated)
2 tomatoes (quartered)
1 teaspoon of white wine vinegar
1 teaspoon of salt
1 teaspoon of black pepper
2 tablespoons of dill (freshly
chopped)
2 tablespoons of parsley (freshly
chopped)

In a large bowl mix the sour cream, vinegar, horseradish,
salt, pepper, and dill. Cut the fish into chunks and remove any excess moisture
with kitchen paper. Cover the fish with the sour cream mixture and allow it to
marinate for 30 minutes in the fridge. Arrange the lettuce leaves on a large
plate and place the dressed fish in the middle, garnish with the cucumber,
tomatoes, and eggs, and sprinkle the parsley over the fish.
Suggestions: Makes a good light summer lunch dish.
