Fish Recipe

Fancy fish loaf (Kalamureke)

Preparation time: 20 minutes

 

Cooking time: 1 hour Serves 6

 

Ingredients:

700 grams of flaked raw fish (cod, perch, mackerel)

3 tomatoes (finely sliced)

4 anchovy fillets (finely chopped)

1 tablespoon of cornflour

2 teaspoons of grain mustard V 4 teaspoon of allspice

3 egg yolks 3 egg whites

125 mls of double cream

1 teaspoon of black pepper

1/2 teaspoons of salt

1 tablespoon of parsley (chopped)

Wedges of lemon

Well grease a 2 litre mould, slice the tomatoes, and arrange them in the bottom of the mould. Grind the fish with a coarse blade and mix it together with the anchovies, cornflour, egg yolks, allspice, salt, pepper, and grain mustard. Stiffly beat the egg whites and fold them into the fish mixture. Turn into the mould and bake in a water bath (Elec 180 °C) Gas 4 until firm and golden brown. Serve immediately, garnished with the parsley and wedges of lemon.

Suggestions: This dish is made more palatable if served with a sauce such as mushroom or parsley.
