COD'S ROE PASTE

SCRAPE all the cooked cod's roe away from the skin, add to taste pepper, salt, mustard (made with vinegar) and a little butter, then heat all well together and pound into a smooth paste. Press it into small basins or glass jars and allow to get cold, then pour over the top some oiled butter, which when set will form a protective covering and the paste will keep for several weeks. This paste can be used as a sandwich filling or as a savoury piled on hot buttered toast, or on bread and butter or toast at tea-time.
