Rhubarb Crumble

rhubarb crumble recipe

16 sticks of rhubarb

6 tbsp water

12 tbsp caster sugar

1-2 tsp powdered ginger (optional)

165g/6oz butter, softened

165g/6oz demerara sugar

300g/15oz flour

  1. Preheat the oven to 180C/350F/Gas 4.

  2. Chop each rhubarb stick into7 or 8 pieces and  sprinkle with the water and caster sugar

  3. Spread the pieces on a baking tray and bake in the oven for 10 to 15 minutes.

  4. Fill a large ovenproof dish with the rhubarb. Sprinkle over the ginger and mix well.

  5. Rub the butter into the flour and sugar to make the crumble topping. Spread over the rhubarb

  6. Bake in the oven until golden brown.
